~*~Chicken Cheese Samosa ~*~


Ingredients :

chicken boiled ( shred ki hoi) 2 cups
spring onion square mein katee hoi 1 cup
capsicum square mein katee hoi 1 cup
cheddar cheese 2 cups
black pepper 1 1/2 tsp
salt to taste
oil for frying
samosa Patti 1 packet
maida 2 Tbsp
water thora sa


Method:

1-chicken boil ker ke us ko shred ker lein
2-Aik pan mein thora sa oil lay ke germ kerein us mein Pehley capsicum dal ker fry kerein us ke baad spring onion dal ker fry kerein us mein thora salt aur black pepper daalain , thanda honey ke liye rakh dein ,
3-Aik bowl mein chicken lein us mein fry ki hoi vegetables daalain phir cheese daalain achee terah mix kerein. 4-Ab samosa patti lein aur us ko samosey ki shape dein us mein chicken bhareyn aur maidey aur pani ki lay se us ko chipka dein,
5-phir oil mein golden brown kerein.
6-podiney ki chaatni ya tomato ketchup ke sath serve kerein

FRUIT CHAAT



INGREDIENTS

1 apple-thinly sliced

2 bananas-thinly sliced

2 guavas-thinly sliced (seeds removed)

1 orange -without skin (wheter use it as juice or slice it into cubes)

1 Pomegranate

Fruit seasoning-as required

salt to taste

sugar 1tbsp

(You can use fruit juice too)

METHOD

Mix all fruits and ingredients in a bowl.Pour any kind of juice and season it..:) or you can use Chaat Masala

Oriental Stir Fry

Ingredients:

1) 1½ lb Beef Roast, lean (or steak)

2) ½ lb Fresh Mushrooms, chopped

3) 2 Celery Stalks (centers)

4) ¼ medium Green Pepper, diced

5) 3 Green Onions, chopped

6) ½ lb Bean Sprouts

7) ¼ lb Snow Peas

8) 1 lb Fresh Green Beans

9) 1 small can Bamboo Shoots

10) 1 cup Water Chestnuts

11) 1 Beef Bouillon Cube S

12) ¼ cup Soy Sauce (or more)

13) 1 medium Carrot (sliced thinly)

14) 1 packet Chowmein Noodles

15) 1 cup Brown Rice

16) Salt (to taste)

17) Oil (for cooking)

Method:
1. Take a large wok and put some oil in it. When hot, saute beef in it, until it turns brown. Add beef bouillon to it and saute for some time.
2. Now, add all the ingredients in it, except for noodles and rice.
3. Stir the vegetables as often as you can, from bottom to top to sides. Keep them covered in between stirrings. Remove from heat when the vegetables are tender.
4. Now, prepare the rice and noodles, according to package directions.
5. Heap the meat and vegetable mixture over rice or noodles or both & then top it with soy sauce.
6. Oriental Stir Fry is ready to eat.

Chicken Pakoray


Ingredients:


Boneless Chicken (cubes) 500 kg

Gram Flour (Besan) 2 tbsp

Rice Flour 2 tbsp

Corn Flour 2 tbsp

Plain Flour 2 tbsp

Chopped Red Chilli 1 tsp

Chopped Coriander Seeds 1 tsp

Roasted Chopped White Cumin Seeds 1 tsp

Salt 1 tsp

Turmeric 1/2 tsp

Egg 1

Finely Chopped Onion Half Cup for half kg

Finely Chopped Coriander Leaves (Hara Dhania) 1 tbsp

Finely Chopped Green Chillies 2 or 3



Method:


1. Put gram flour, rice flour, corn flour and plain flour in a bowl.
2. Then add chopped red chilly & chopped coriander seeds.
3. Add white cumin seeds and salt in the above mixture.
4. Add turmeric and then add egg.
5. Mix all the ingredients.
6. Add the finely chopped onion, green chili and coriander leaves.
7. Mix well.
8. Now add the chicken pieces in the mixture.
9. Deep fry every piece in low flame.
10. Tip: If the mixture is not coating the chicken pieces , add 1 - 2 tablespoon water.

Ingredients to prepare egg pakora
Recipe:
(Serves two)
6 boiled eggs
1 cup gram flour (Besan Flour)
1/2 tsp each of salt, red chilli powder,
1/4 tsp each of cumin & ajwain/vaamu
A pinch of baking soda
Quarter cup of water
Peanut Oil for deep-frying
Preparation:
1. Cut each egg into 3 circular pieces. I removed yellow from some pieces, but you can keep it if you like to.
2. Gram flour is a fine yellow flour made from garbanzo beans or chanadal. Put the gram flour into a bowl; add salt, red chilli powder, cumin and baking soda. If you want, you can also add ginger-garlic paste to get the extra kick. Stir in these ingredients well. Add quarter cup of water to them and mix thoroughly. Add water if needed, the prepared batter must be tight (tighter than pancake batter and regular bhaji batter). It should form thick coating around the eggs when they are dipped in the batter.


3. Fill one-third of a large deep skillet with oil and heat the oil until it is very hot.
4. Dip the egg pieces one by one into batter, taking caution to coat the egg all around with the batter. This is important because there will be a mini explosion if raw egg touches the hot oil, as you may already know, and that is why the need for a thick batter. Now take the dipped egg pieces and drop them gently into the hot oil, few at a time.
5. Fry the egg pakoras until they are golden brown, turning frequently. Remove them with a slotted spoon and drain well on absorbent paper towels.
Arrange the pakoras on a platter and serve them hot or warm with ketchup or cilantro chutney.

These small egg pakoras are quick and easy to prepare and irresistible as snack.

Chicken Corn Fritters

Ingredients:

* 1 can (15-1/4 ounces) whole kernel corn, drained
* 1 cup finely chopped cooked chicken
* 1 egg, lightly beaten
* 1/2 cup milk
* 2 tablespoons butter, melted
* 1/2 teaspoon salt
* 1/8 teaspoon pepper
* 1-3/4 cups all-purpose flour
* 1 teaspoon baking powder
* Oil for deep-fat frying

GREEN CHILI SAUCE:
* 1/3 cup butter, cubed
* 1/4 cup all-purpose flour
* 1/4 teaspoon salt
* 1/8 teaspoon pepper
* 1/8 teaspoon garlic powder
* 1/8 teaspoon ground cumin
* 1 can (4 ounces) chopped green chilies
* 1 cup milk
* Shredded cheddar cheese, optional

Method:
Place corn in a large bowl; lightly crush with a potato masher. Stir in the chicken, egg, milk, butter, salt and pepper. Combine flour and baking powder; stir into the corn mixture just until combined.
In a deep-fat fryer or skillet, heat 2 in. of oil to 375°. Make reasonable size petty & drop in oil. Fry for 3 minutes on each side or until golden brown. Drain on paper towels; keep warm.

In a large saucepan, melt butter over medium-low heat. Stir in flour and seasonings until smooth. Add chilies. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with corn fritters; sprinkle with cheese if desired.
